Southwest Style Breakfast Burrito with Guacamole Mango Salsa
Ingredients for the salsa:
1/2 cup Cabo Fresh Authentic or Spicy Guacamole
1/2 mango, diced small
1 tomato, diced small
1 tablespoon chopped cilantro
Squeeze of lime juice (optional)

Directions for the salsa:
Mix all salsa ingredients together and set aside.

Ingredients for Burritos:
1 teaspoon olive oil
1 tablespoon red onion or shallot, minced
1 tablespoon red pepper, diced small
3 eggs
kosher or sea salt and freshly ground pepper
1/4 cup cooked brown rice
1/4 cup black beans
1 ounce Monterey pepper jack cheese, shredded
2- 8 inch whole wheat tortillas

Directions for Burritos:
Heat olive oil over medium heat; add onions, sauté for 3 minutes, add red pepper and sauté for another 2-3 minutes. Put eggs in a medium bowl and beat well, season with salt and pepper. Add the eggs to the pan with onions and peppers and scramble the eggs until almost done, add the rice and beans, and cheese and cook another 2-3 minutes. Heat the tortillas until soft and place half of the mixture on each tortilla and wrap burrito style. Cut in half and serve with salsa.
