Turkey and Pepper Jack Cheese Sandwich with Sprouts and Tomato
4 slices whole grain bread
4 ounces roasted turkey breast
2 slices Monterey pepper jack cheese
4 tablespoons Cabo Fresh Guacamole
1 tomato, sliced
clover sprouts (or combination of sprouts), arugula, or other leafy greens

Lay bread slices on cutting board and spread each slice with 1 tablespoon guacamole. Top 2 slices of the bread with turkey, cheese, and tomato. Top the other slices with the sprouts or other leafy greens. Put two sides together and cut in half. This would be great served with the Red Potato Salad with Bacon and Guacamole.
